Angela’s Refreshing (and addicting) Spring Salad

Hey friends!  Our family is eating at home nonstop now because, well, we are stuck at home!  I’ve been getting bored with eating the same old meals and I know my friends are too.  That inspired me to start sharing a few easy and delicious recipes with you.  This first one is a recipe that my sweet friend, Angela, makes all the time.  It’s my husband’s favorite salad, and although he won’t admit it, he’s a picky eater.😉  The best part is that it’s super healthy!


-ANGELA’S SPRING SALAD-

1 full container of mixed green salad

1 Granny Smith apple sliced very thin

1 handful of candied pecans (I get mine from Trader Joe’s)

1 handful of cranberries (love to add these in the fall or for  Thanksgiving)

Toss in some herb croutons

1/2 cup crumbled goat cheese

Rotisserie chicken (optional)

I enjoy this salad with a sweet and acidic dressing.  I like to dress it with a combination of Champagne Pear Vinaigrette and a Rosé and Red Wine Dressing.  I mix equal parts and its so good.  I find both at Trader Joe’s but any dressing you love will be great.  It would be tasty with a raspberry dressing too!  Now I’m getting hungry!

I like to serve this along side of a chicken or fish dish, such as salmon, and top it all off with a crisp, refreshing glass of white wine.  Enjoy!  XO
