Simple & Healthy Protein Pancakes!

Good morning ladies, rise and shine!  I’ve never been the mom that wakes up at the crack of dawn and makes a delicious breakfast for the whole family on weekdays.  I find it a little challenging because we always seem to be running against the clock.  Since it’s tricky enough getting three kids ready for school and making lunches, we just grab something and run.  However, this is one of the very few recipes I make during the week that’s not only incredibly fast and easy, but its tasty and healthy!  You can whip it up in about 5 minutes.  This recipe makes about 8 pancakes, but you can very simply alter the recipe to make more or less.

 

1 cup healthy oats (I use this one)

1 cup low fat cottage cheese

1 cup egg whites

1 tspn. almond extract

1 tspn. vanilla extract

Dash of cinnamon

 

Mix all of the listed ingredients in a Nutribullet and cook them in a skillet as usual.  I top it with Blue Agave syrup and you can get creative and throw on whatever fruit you’d like.  Since these are totally healthy, I don’t mind adding some fun toppings for the kids, such as whipped cream or some mini chocolate chips.  These can be refrigerated and served the next day, as well.  I hope you enjoy these as much as our family does!  What are some of your favorite healthy breakfast recipes?
