Is anyone else super happy that Fall is here?! I’m going to get a little personal here for a moment. Growing up, Thanksgiving was the only holiday my family observed, so we went ALL OUT! Our family has gone through a lot of changes since, my siblings and I are all parents now, and we have chosen to celebrate the traditional holidays. Even so, Fall always holds a special place in my heart. The warm comfort foods, the scents, and of course the family time. Today I’m going to share one of my favorite heart and belly warming recipes that I adopted and adapted, from my sister in law. This one is perfect for those chilly Fall days (not that I really know what that is, since we are in the forever hot California). It’s also one of my favorite hearty meals to enjoy when I’m under the weather. If you’re into chicken noodle soup, this has a very similar taste and I think you will love it!
This doesn’t really have a name so on a whim and with a lack of creativity, I’ll call it Chicken and Rice with Veggies.
Prep Time 20 min.| Cook Time 30 min.
Ingredients
Precooked Rotisserie Chicken, shredded into big strips (saves a ton of time!)
1.5 cups white rice
1 can of Cream of Chicken Soup
1 large container of Organic Low Sodium Chicken Broth
1.5 cups of chopped Carrots (I use rainbow carrots, the kids love them!)
1.5 cups chopped celery
1.5 cups yellow onion
2 tbsp. fresh, flat leaved parsley
4 cloves minced garlic
Extra virgin olive oil
Salt & pepper
Method
|Step 1|
Start by steaming the white rice in the rice cooker first. Use chicken broth to cook rice rather than water.
|Step 2|
Combine veggies in a skillet that’s lightly coated with olive oil. Sprinkle salt/pepper on veggies and sautée for about 10 minutes on medium-high heat, until veggies are translucent.
|Step 3|
Add 1.5 cups chicken broth to veggies. Add the shredded chicken to the pan. Pour in the can of cream of chicken soup and allow mixture to simmer for a moment.
|Step 4|
Add the cooked rice into the pan and combine all ingredients. Add more salt and pepper to taste and serve immediately.
