Tricky Ways to Get Kids to Eat Greens!

It can be so tough to get my kids to eat their vegetables.   They had a heart attack the first time we suggested they try carrot cake just because of the name.  Needless to say, I’ve had to become very tricky in order to get some greens into their little growing bodies.  I originally found this recipe for Spinach Cake Muffins on Weelicious.com.  (If you haven’t visited their site I totally recommend it).  They have the most creative recipes for kids.  I’ve made a few small changes just to suit my kids desires and now I literally bake these every week.  It’s super simple and fast. Here we go:

1/2 cup organic unsweetened apple sauce

1 large egg

1 tsp. vanilla extract

1 tsp. almond extract

1 1/2 cups fresh spinach, packed

1/3 cup sugar

2 tbsn. vegetable oil

Blend the first 7 ingredients in a Nutribullet and set aside.  In a bowl combine:

1 1/2 cups all purpose flour OR whole wheat flour.  They’re both delicious 

1 tsn. baking powder

1/2 tsn. baking soda

1/2 tsn. kosher salt

2 shakes of ground cinnamon (optional)

Slowly incorporate the wet and dry ingredients.  At this point Benjamin throws in some handfuls of mini chocolate chips.  Stir until combined.  Line a mini muffin tin with mini muffin wrappers, I use this tin and these wrappers.  Grease with nonstick spray and then fill each one 2/3 full.  I use this ice cream scoop to get all of the muffins the same size.  Bake at 350 degrees for 10-12 minutes.

As for the flower tin I used in the picture above, this was my first time trying it and it makes them extra cute.  You don’t need to line it but you do have to use this spray so they pop right out.  I hope you guys love these as much as our family does!  Be well!
